Fried pies with green onions for summer — according to grandmother's recipe.


These pies are truly the taste of summer, familiar since childhood. Soft, tender kefir dough, fragrant filling of green onions, garlic, and smoked cheese — just like in the old days when grandmother used to cook. No yeast, no extra hassle, a wonderful choice for breakfast, a picnic, or a simple dinner.

You will need:
- warm kefir — 500 ml;
- salt — 1 teaspoon;
- flour — 750–800 g;
- baking soda — 1 teaspoon.
For the filling:
- green onions — a bunch;
- garlic — 2–3 cloves;
- smoked processed cheese — 300 g;
- eggs — 2 pcs;
- salt, pepper mix — to taste;
- oil — for frying.
Cooking method
In a bowl, mix kefir with salt. Gradually add flour with baking soda, kneading soft dough. Cover with film and leave for 20 minutes to rest.

For the filling, finely chop the green onions and garlic, grate the cheese, add eggs, salt, and pepper. Mix everything until homogeneous.

Divide the dough into small pieces, shape into balls, and roll out into flatbreads. Place the filling, pinch the pies.

Fry over medium heat on both sides until golden brown.

Place on paper towels to remove excess oil.
