You will need:
- cucumbers — to fill a 1-liter jar;
- horseradish leaves;
- horseradish root;
- garlic — a few cloves;
- dill flowers;
- cherry and currant leaves — a few pieces of each;
- bay leaf — 1-2 pieces;
- black peppercorns — to taste;
- allspice — to taste;
- salt — 1 tbsp. (without a heap);
- cold water — for pouring.
Preparation Method
Place horseradish leaves and root, a few garlic cloves, dill flowers, cherry and currant leaves, bay leaf, black and allspice peppercorns at the bottom of a sterilized 1-liter jar.
Tightly pack the jar with fresh cucumbers. Add 1 tbsp. of salt without a heap. Fill with cold water to the top.
Leave the jar at room temperature for 2-4 days for natural fermentation. After fermentation is complete, drain all the liquid from the jar.
Separately boil clean water (without salt or vinegar) — about 500-600 ml for each jar. Pour boiling water over the cucumbers to the top, and immediately seal with sterilized lids.
After that, turn the jars upside down, wrap them in a blanket, and leave them until completely cool. Store in a cool dark place.
